Sidama Bombe Anaerobic Fermentation

Grade Grade 1

Ethiopia Sidama Bombe Grade 1 Anaerobic is a vibrant, fruit-forward coffee that showcases how thoughtful fermentation can build a naturally expressive cup profile.  Produced by small holding farmers growing traditional heirloom varieties between 2,250 and 2,400 masl, this Grade 1 anaerobic lot comes from the Bombe district and its sourced through our partners Tracon coffee, where every lot is carefully processed integrated sourcing, to preserve traceability and consistency for specialty coffee roasters.

In the cup, this coffee presents notes of berry, cherry, dried fruit, cocoa, and floral aromatics, supported by a smooth mouthfeel and balanced sweetness. The anaerobic process enhances fruit intensity and complexity while maintaining a clean, structured profile with a lingering finish.

Available in very small quantities, this green coffee is an excellent choice for specialty coffee roasters seeking traceable anaerobic Ethiopian coffee with expressive fruit character, careful preparation, and the distinctive qualities of Sidama’s region.

This is unroasted coffee ready to be roasted at home or your local roastery.

What is so special about this coffee?

Sidama Bombe G1 Anaerobic combines the traditional diversity of Ethiopian heirloom varieties with a controlled anaerobic fermentation process. Unlike conventional natural coffees, anaerobic fermentation takes place in an oxygen-limited environment before drying, allowing the coffee to develop additional aromatic complexity while preserving the regional character of Sidama.

The combination of high-elevation cultivation, Grade 1 preparation, and anaerobic processing creates a coffee that offers a different expression of Ethiopian coffee without losing its sense of origin. It is an example of how modern processing methods can complement, rather than replace, the qualities developed through variety and terroir.

What makes Tracon coffees so special?

For more than 30 years, Tracon Coffee has worked with coffee-growing communities across Sidama, Yirgacheffe, Guji, Limu, and other renowned coffee regions in Ethiopia. Alongside coffee from its own farms, the company partners with a trusted network of smallholder producers and operates its own washing stations, dry mills, and export facilities, allowing every lot to remain traceable from origin to shipment.

Before a coffee leaves Ethiopia, each lot is cleaned, sorted, cupped, and prepared by Tracon's in-house quality team. By overseeing every stage from processing to export, Tracon helps preserve the unique character of each region while delivering the consistency, traceability, and preparation standards specialty coffee roasters expect.

The Land Behind Sidama Bombe Coffees

Bombe is located in the Bensa district of Ethiopia's Sidama region, where coffee is cultivated between 2,250 and 2,400 meters above sea level. Cool temperatures and a long growing season allow coffee cherries to mature gradually, supporting the development of dense beans and the distinctive cup profiles for which the region is known.

Coffee production in Bombe is centered around traditional Ethiopian heirloom varieties grown in fertile volcanic soils under favorable highland conditions. Together, the region's elevation, climate, and long coffee-growing tradition provide the foundation for coffees that express a clear sense of origin while responding well to both traditional and innovative processing methods.
