Rose Watermelon is a Caturra lot produced by Sara Gutiérrez at Finca El Silencio in Buenavista, Quindío, Colombia. Sara’s interest in microbiology and fermentation has led her to explore different ways of working with varieties already established on her family farm. For this lot, she uses a honey process with the addition of Geisha and Bourbon mostos and rose petal tea, followed by sun drying.
In the cup, the profile is highly floral and fruit-forward, with watermelon, blueberry, rose, and tropical fruit. Medium, juicy acidity keeps the fruit character lively, while a silky body gives the coffee a smooth mouthfeel.
Available in a 24kg box protected with GrainPro to help preserve freshness, Rose Watermelon is a Colombian Caturra green coffee for roasters looking for an experimental honey process with a distinctly floral and fruit-driven profile.
The unusual part of Rose Watermelon is what happens during its 72-hour fermentation. Geisha and Bourbon mostos are added alongside rose petal tea while the Caturra is processed as a honey. Mosto is the liquid produced during coffee fermentation, carrying material from that fermentation environment. Here, mostos from two other coffee varieties become additional variables in the processing of the Caturra lot.
That distinction matters: the coffee itself is still Caturra, not Geisha or Bourbon. Those names refer specifically to the mostos used during processing. Together with the rose petal tea, they form part of the fermentation Sara manages before the coffee is sun-dried.
A fifth-generation coffee producer from Quindío, Colombia, but coffee wasn't always the path she expected to follow. Sara grew up in a coffee-producing family in Quindío and still didn't see a future for herself in the industry until her early twenties, when a difficult period for coffee producers pushed her to look at specialty coffee differently.
Education changed that perspective. Sara discovered that coffee could bring together science, microbiology, technical knowledge, and sensory analysis, giving her a way to contribute something different to the work her family had done for generations. That became the foundation for her role today at Finca El Silencio: continuing in coffee, but building an approach of her own.
Finca El Silencio is located in Buenavista, Quindío, Colombia, between 1,400 and 1,600 masl. The farm grows several coffee varieties, including Castillo, Caturra, Yellow and Red Colombia, Catimor, Pink Bourbon, and Cenicafé 1.
The mix also shows how coffee production at Finca El Silencio has evolved. Castillo, Colombia, and Caturra were already part of the family's production before Sara began developing her own work in specialty coffee. Today, those cultivars grow alongside additional varieties, expanding what the farm can explore through variety selection, processing, and fermentation.
