This washed Papayo comes from Finca El Paraíso in Cauca, Colombia, where it is grown at 1,960 masl. The Bermudez brothers work with carefully selected ripe cherries, combining low-temperature anaerobic fermentation with a thermal-shock wash, a controlled process built around preserving the variety’s delicate aromatic character.
Papaya, mango blossom, and jasmine lead the aroma, followed by mandarin, ripe papaya, and fruit tea in the cup. Bright, tropical acidity brings energy to a medium, silky body, while the finish remains sweet, floral, and persistent.
Available in a 24kg box with the coffee vacuum-packed in GrainPro, this lot gives roasters a chance to work with a less familiar Colombian variety and a profile that balances tropical fruit with florals and clean citrus definition.
After selection, the cherries are sanitized with ozone and immediately depulped. The coffee then undergoes a 24-to-36-hour anaerobic fermentation in sealed tanks at a controlled low temperature, with Lactobacillus introduced as part of the fermentation.
The coffee receives a double thermal wash, beginning with water at 48°C and followed by a cold-water shock at 4°C. It is then dried in a dehumidifier for 30 to 40 hours, allowing moisture to be removed evenly before the coffee is stabilized, hulled, and kept under cool conditions.

Founded in 2008 by Diego Bermúdez and his brother Alexander, Finca El Paraíso is located in the Piendamó region of Cauca, Colombia. Though not from a coffee-growing family, Diego’s passion and hard work led him into coffee cultivation while studying Agricultural Business Administration, selling coffee to cooperatives to support his education.
In 2015, Finca El Paraiso won first place in a regional coffee competition, launching them into the specialty coffee world. Their success inspired them to keep innovating in coffee processing, and today they continue to deliver exceptional, sustainable coffee that has disrupted the world of specialty coffee.
