Meet Alma Silvestre by Santiago Quiroga, from Quindio, Colombia. Coffees from this farm ranked the 30 best coffees in 2024 Colombia, Land of Diversity competition; a clear marker of the quality and attention behind Santiago’s work at origin Alma Silvestre produces coffee with intention, focusing on clean processing, stable results, and practices that hold up season after season.
In the cup, this blend of Bourbon, Typica and Caturra presents a fruit-forward profile with notes of guava, fresh fruit, berry, cocoa, citrus fruit, and dried fruit. The acidity is bright and juicy, balanced by a round mouthfeel and a caramel-toned aftertaste. Elevated sweetness and high intensity across fragrance, flavor, and aftertaste give the cup strong presence without becoming overwhelming.
Available in 35kg bags with GrainPro lining for optimal preservation, this coffee offers flexibility across different roasting approaches. It performs well as a single origin while maintaining the structure and consistency needed for blending, making it a reliable option for roasters working with natural profiles.
A single origin that stands comfortably on its own, refined, expressive, and easy to position on a menu. The kind of coffee that draws attention for the right reasons and keeps it.
One of the key elements behind this lot is how the blend is structured at origin. By combining Bourbon, Typica, and Caturra, the profile is built with intention, balancing different cup attributes to achieve a more stable and predictable result. Instead of depending on a single varietal, this approach allows for better control over variability, especially in natural coffees where small changes can significantly impact the final cup.
This structured approach is supported by Alma Silvestre’s production model, where consistency is prioritized through organized post-harvest management and lot preparation. For roasters, this translates into a coffee that maintains its profile across different batches and roasting curves, offering reliability in both flavor development and day-to-day performance.
The Florencia farm stands out for its commitment to eco-friendly practices. By using 100% solar drying and avoiding herbicides, the farm not only protects the local ecosystem but also ensures a sustainable production process. Their state-of-the-art water-saving equipment significantly reduces water usage, allowing the farm to save money that is reinvested into other green practices, making their production even more sustainable.
This balance of eco-conscious innovation and traditional hand-picking methods sets Alma Silvestre apart from other specialty coffees. Santiago Quiroga’s dedication to sustainability means that every cup combines the best of Quindio with the expertise of his team, resulting in a high-quality, ethically produced coffee that both roasters and consumers can enjoy.
Alma Silvestre focuses on growing specialty coffee blending traditional methods with sustainable practices to produce high-quality coffee. They avoid the use of agricultural herbicides and have put in place eco-friendly techniques like solar drying and manual weed control, preserving Quindio’s coffee heritage while keeping very high standards.
