Grown in Sierra Nevada, Santa Marta, this washed green coffee is the perfect mix of Caribbean character with classic Colombian balance and clarity. Produced by COOCAFE SN, a coop based in the world’s highest coastal mountain range, rising directly from the Caribbean coast to high elevations. This unique geography, combined with stable climatic conditions, supports a steady cherry development and contributes to a balanced and consistent cup profile.
This Castillo offers a clean and structured cup, with notes of cocoa, soft caramel sweetness, and light spice, supported by a mild fruit character. The profile is well-balanced and easy to work with. Medium acidity and a smooth mouthfeel give it clarity, making it reliable across different roast styles without losing definition.
Available in 70 kg bags and packed in plastic for optimal preservation, this coffee comes from a unique region of Colombia and is well suited for roasters looking for a reliable, clean cup profile and consistent performance. It reflects an organized production model and cooperative framework that prioritizes continuity and quality at origin. A dependable option for roasters seeking consistency and a clear, well-structured cup from the Sierra Nevada.
Grown by smallholder farmers in the Sierra Nevada, Colombia, this coffee comes from one of the most unique regions in Colombia, where the mountains rise directly from the Caribbean coast. This proximity creates a distinct microclimate, with warm coastal air, steady humidity, and cooling mountain elevations working together to influence how the coffee develops. This coastal influence allows for slower, more even cherry maturation, supporting balanced sugar development and a cup that is both structured and approachable, with a subtle roundness.
Combined with careful, manual harvesting on steep terrain and the coordination of COOCAFE SN, this results in a coffee that brings together natural complexity and consistent processing; delivering clarity, stability, and reliable performance across different roasting approaches.
COOCAFE SN brings together smallholder coffee producers in the Sierra Nevada de Santa Marta, in the municipality of Ciénaga, Magdalena. Formed as a cooperative to improve market access and strengthen production practices, it provides a more stable framework for farmers working in a region where terrain, climate, and isolation can make coffee production more challenging. Through collective organization, producers are able to coordinate efforts, share knowledge, and approach coffee as a more sustainable long-term activity.
Over time, the cooperative has focused on strengthening both quality and continuity. Members receive technical support in agronomy and post-harvest practices, while shared quality evaluation helps align expectations across farms. This work has been supported by certifications such as Organic and Fairtrade, reflecting an ongoing effort to align production with recognized standards and improve market access. Each lot reflects this coordinated approach, where individual smallholder production is supported by a broader structure that prioritizes consistency, organization, and long-term viability at origin.
COOCAFE SN coffees come from small, family-run farms located along the slopes of the Sierra Nevada de Santa Marta, where rugged terrain and varying elevations shape how coffee is grown and harvested. These conditions require a more hands-on approach, with careful cherry selection and processing adapted to each microclimate, contributing to a clean and steady cup profile.
Rather than a single estate, COOCAFE SN is a collective of 88 producers working across different communities in the region. Each farm brings its own conditions and experience, but all are connected through a shared approach to quality and long-term sustainability. The result is a coffee that reflects both the diversity of the landscape and the coordination behind it: balanced, consistent, and rooted in place.
