El Silencio Farm

Colombia

Fifth-generation producer Sara Gutiérrez is bringing a different approach to her family’s coffee farm in Buenavista, Quindío. At Finca El Silencio, she combines generations of farming experience with microbiology, fermentation, and sensory research to explore what’s possible with Colombian green coffee.

About Finca El Silencio,

Finca El Silencio is a family coffee farm in Buenavista, Quindío, Colombia, led by fifth-generation coffee producer Sara Gutiérrez. Coffee had always been part of Sara’s family life, but for years she did not see herself building a future in it. That changed in her early twenties, during a difficult period for coffee producers, when she began to see specialty coffee as a way to continue her family’s work while building her own place as a woman in coffee production. Education was the turning point. Learning about microbiology, fermentation, and the science behind coffee processing gave her a different way to look at the crop she had known her entire life.

The family had historically worked with varieties including Castillo, Colombia, and Caturra, rather than relying on rare varieties to create differentiated coffees. Sara began experimenting with processing instead. At Finca El Silencio, she has developed alcoholic, lactic, and acetic fermentations, working with elements such as mosto, yeasts, bacteria, and hops to explore different fermentation pathways and sensory profiles. Today, the farm also grows varieties including Yellow and Red Colombia, Catimor, Pink Bourbon, and Cenicafé 1, between 1,400 and 1,600 masl in Buenavista.

For Sara, experimentation is closely connected to a larger goal: bringing more technical knowledge into coffee farming and creating more value from varieties already growing on the farm. What started with education has developed into years of testing fermentation methods and learning how different microorganisms and ingredients behave during processing. The result is a farm where five generations of coffee-growing experience meet Sara's own interest in microbiology, sensory development, and a more technical approach to production.

What makes Finca El Silencio coffee so special?

What stands out about Finca El Silencio is how Sara approaches experimentation. She began with the varieties her family was already growing and asked how much more she could understand and develop through processing. That curiosity led her to study the science behind fermentation and turn the farm into a place where ideas are tested, evaluated, adjusted, and tested again.

There is also an interesting shift between generations. Sara didn't move away from her family's coffee-growing experience; she added a new layer to it. Five generations of farming knowledge now sit alongside microbiology, fermentation research, and sensory analysis, giving Finca El Silencio an approach that is both connected to what the family already knew and open to changing how their coffees are produced.
