About Alma Silvestre

The story of Alma Silvestre begins in 2017 when Carlos Alberto Quiroga, a dedicated coffee farmer, decided to transform the way he produced coffee. He moved away from large-scale practices and focused on quality and traceability. His vision was to showcase the extraordinary coffee grown on his farm, but unfortunately, a serious illness cut his dream short.

In 2020, amidst the global pandemic, his son Santiago Quiroga made a life-changing decision. Leaving behind a career as a corporate lawyer, he took on his father’s dream—to take Colombian coffee to new heights. Alma Silvestre was born as a continuation of this vision, rooted in the family's passion for innovation and excellence.

Today, Alma Silvestre represents more than just a coffee; it’s a testament to perseverance and the dedication to sustainable practices. Santiago and his team are committed to innovating how they produce coffee, while maintaining sustainable practices and a strict focus on quality. From planting the coffee trees to carefully selecting and processing each bean, they ensure that every step is handled with care, right through to the final packaging. Santiago’s mission is to continue his father’s legacy and share the exceptional coffee from their farm with the world.

What makes Alma Silvestre coffee special?

The careful processing by Santiago Quiroga at his Florencia farm in Quindio, makes this coffee truly special. The coffee undergoes natural anaerobic fermentation and is cultivated using sustainable practices. Ripe cherries are hand-picked and fermented for four days, resulting in tropical fruit flavors, complemented by sweet mango and subtle notes of wine.

Post-fermentation, the coffee is dried slowly over 30 to 40 days on solar beds, ensuring an even drying phase that preserves its sweetness and complex profile. This commitment to eco-friendly methods, including completely sun drying and the avoidance of herbicides, allows Alma Silvestre to stand out. No wonder this coffee is among the 55 best coffees of this year's Colombia Land of Diversity.
