Palestina Blend is a washed green coffee cultivated by a group of dedicated producers in the upper part of the Palestina municipality in Huila, Colombia. Grown at around 1,700 masl under shade and native trees, this lot features a blend of Caturra and Tabi varieties selected across 2,750 hectares. The microclimate of this region results in a cup that stands out for its bright acidity, delicate body, and well-balanced complexity—traits that set it apart from other coffees in Huila.
The coffee is produced by members of the CADEFIHUILA Cooperative, a well-established organization supporting 27 municipalities in Huila. With six decades of experience, the coop plays a key role in maintaining quality and price stability for its members while promoting certifications like Fairtrade and Rainforest Alliance. Cherries are traditionally washed, fermented for 12 hours, and double-rinsed before being dried by sun or machine. This process results in a cup with brown sugar, almond, caramel sauce, citric brightness, and a chocolaty finish.

Sidra Bourbon is the result of bold experimentation and years of dedication by. His Farm, San Gabriel in Huila, Colombia, has shifted towards rare varietals and quality-focused production: a journey that began with its entry into the Cup of Excellence competition and peaked with a second-place finish in 2021. What sets this coffee apart is its 90-hour dry fermentation in sealed barrels, followed by a slow 28-day drying phase and 15-day rest: methods that reveal a deep understanding of how time, temperature, and airflow influence flavor.
The result is a cup full of character: wildly fruity and silky, with layered notes of mango, raspberry, milk chocolate, and candied orange. Its citric acidity and sweet, lingering finish are balanced and refined, showcasing both the uniqueness of the Sidra Bourbon variety and the precision behind its process. It’s a thoughtful coffee, made with skill and intention.

CADEFIHUILA is a non-profit cooperative that’s been supporting coffee farmers in Huila, Colombia for over 60 years. With a network of 45 coffee purchase points, 46 fertilizer stores, and 16 cupping labs, it ensures farmers have the resources they need to grow high-quality coffee. They also provide drying services and market access for small producers.
The cooperative follows strict quality standards, meeting global certifications like Fairtrade, Rainforest Alliance, 4C, and C.A.F.E. Practices. This helps members tap into high-demand markets for specialty coffee. By guaranteeing cash payments and offering the best price possible, CADEFIHUILA plays a key role in keeping the local coffee industry stable and growing.
