Produced at 2,000 meters above sea level in the Coffea diversa Garden in Guatemala, the coffee is grown under shade from plantain, banana, and avocado trees. These high-altitude, biodiverse conditions support slow and uniform cherry maturation, resulting in good bean density, clarity, and aroma.
In the cup, Bourbon Rey shows a refined and layered profile, with bright lime zest and delicate magnolia florals, with hints of cedar and almond. Bourbon Rey is a rare and carefully preserved mutation of the Bourbon variety, and now grown at the Coffea diversa Garden in Guatemala. Known for its larger-than-average beans, similar to Typica mutants like Maragogype, this variety offers good structure, clear aroma, and layered fruit notes. With very limited production and genetic significance, Bourbon Rey remains a rare offering within Coffea diversa’s botanical portfolio.
The fully-washed process amplifies the intrinsic character of Bourbon Rey, resulting in a clean, transparent cup with exceptional definition. Coffea diversa’s commitment to quality is obvious in its limited production. Gonzalo Hernandez and Jose Padilla grow only a few trees of each variety, resulting in exclusive, small-batch coffees sold in 10-kilogram bags. Coffea diversa Suchitan is a collaborative effort by Jose Padilla and Gonzalo Hernandez. In the early 2000s, these two coffee friends took seeds from the original Coffea diversa garden in Costa Rica and established a new coffee garden in Suchitan, Guatemala, giving birth to Coffea diversa Suchitan.
Gonzalo explains, "We call ourselves a garden and not a farm. A coffee farm is normally monovarietal. In our case, we produce so many coffee botanical varieties.
