With an SCA score of 93 points, The Bourbon Rey from Guatemala is a unique mutation of the Bourbon variety, discovered on the Coffea diversa garden. Producing giant seeds similar to Typica Mutant Maragogype and its hybrids, it offers a complex and refined flavour profile. The winey anaerobic process enhances its distinct characteristics, imparting rich, wine-like notes and vibrant, fruity acidity.
This 48-hour anaerobic fermentation results in intense flavours of dried mango, lemon, and peach, with hints of honeysuckle in the aroma. The light body and silky smooth floral finish make each sip a delightful journey, cherished by coffee connoisseurs worldwide.
Coffea diversa distinguishes itself apart by cultivating over eight hundred coffee species, varieties, and mutations across three gardens. Thirty of these are found on the Suchitan volcano in Guatemala, where the mineral-rich soil nourishes the plants. Unlike typical coffee estates, Coffea diversa grows rare and exotic varieties, offering unique flavours and profiles not found elsewhere.
Coffea diversa’s commitment to quality is obvious in its limited production. Gonzalo Hernandez and Jose Padilla grow only a few trees of each variety, resulting in exclusive, small-batch coffees sold in 10-kilogram bags. This careful cultivation ensures each batch is a unique and sought-after experience for roasters and connoisseurs worldwide.
Coffea diversa Suchitan is a collaborative effort by Jose Padilla and Gonzalo Hernandez. In the early 2000s, these two coffee friends took seeds from the original Coffea diversa garden in Costa Rica and established a new coffee garden in Suchitan, Guatemala, giving birth to Coffea diversa Suchitan.
Gonzalo explains, "We call ourselves a garden and not a farm. A coffee farm is normally monovarietal. In our case, we produce so many coffee botanical varieties.
