La Pastora Tarrazu - Fully Washed

Grade SHB

From the highlands of Tarrazu, Costa Rica, La Pastora Washed is produced by smallholder farmers of Coope Tarrazu, one of the country’s most established and respected cooperatives. Grown at elevations between 1,200 and 1,800 metres (Above sea level), this coffee reflects the region’s ideal climate and long-standing tradition of producing clean, consistent washed coffees.

In the cup, La Pastora is bright yet approachable, with floral notes of bergamot leading the way. Layers of nougat, pistachio, and warm spices such as cardamom add depth, while subtle hints of vanilla round out the profile. The acidity is low-toned and smooth, with a light body, finishing with a sweet, gentle floral and fruity aftertaste.

What is so special about this coffee?

La Pastora represents the heart of Tarrazu, Costa Rica’s most renowned coffee-growing region, and the collective work of the farmers of Coope Tarrazu. Grown at elevations between 1,200 and 1,800 meters and classified as Strictly Hard Bean (SHB), this coffee benefits from slow cherry maturation, which helps develop clarity and balance in the cup. Its long history and consistent quality have made La Pastora a reference point for classic Costa Riacn washed coffees.

What truly sets La Pastora apart is its clean, profile and reliability across brew methods. The washed process highlights floral aromatics and soft sweetness, delivering a cup that is smooth, lightly bodied, and easy to enjoy without being overwhelming. La Pastora is a coffee that works just as well for everyday drinking as it does for roasters looking for a dependable, well-defined Central American profile.

Consistency at the Heart of Tarrazu

While many large cooperatives struggle with consistency, Coope Tarrazu operates with centralized processing, strictly quality protocols and clearly defined standards that apply across all contributing farms. This allows them to produce coffees that remain reliable and traceable, even when working with hundreds of small producers across the Tarrazu region.

Beyond consistency, Coope Tarrazu distinguishes itself through its long-term investment in farmer support and process innovation. The cooperative actively trains producers, upgrades processing infrastructure and experiments with fermentation techniques such as anaerobic methods, all while maintaining clean, balanced profiles that appeal to a wide range of roasters. This ability to evolve without chasing trends has positioned Coope Tarrazu as a benchmark not just for Costa Rica, but among leading cooperatives globally.
