Unroasted Coffee

Ghimbi honey unroasted green coffee beans from Costa Rica's Coffea diversa

Costa Rica Ghimbi Honey

Originally discovered near the village of Ghimbi in the Oromia region of southwest Ethiopia, this wild Ethiopian variety now grows in the Coffea Diversa garden in Biolley, Costa Rica. Known for its tall stature and wide branch spacing, the Ghimbi plant produces a low yield, making every harvest both rare and precious. Its reddish young leaves and delicate structure reflect the natural beauty of its origin.

Ghimbi offers a citric tangerine aroma and a flavor complexity defined by floral, citrus, panela, honey, and nutty tones. The coffee’s medium, silky body and balanced acidity create a refined harmony, where each element complements the next without overpowering. This is a coffee that speaks quietly but leaves a lasting impression.

Available in small quantities,  this limited micro-lot embodies Coffea Diversa’s mission to preserve and share the world’s rarest botanical varieties. For roasters seeking a coffee that unites Ethiopian heritage with Costa Rican craftsmanship, Ghimbi is a standout choice.

This is unroasted coffee ready to be roasted at home or your local roastery.

What is so special about this coffee?

What makes Ghimbi so special is its origin and natural rarity. Originally discovered near the village of Ghimbi in Ethiopia’s Oromia region, this wild Ethiopian variety now thrives at the Coffea Diversa garden in Biolley, Costa Rica, where its preservation is part of a broader effort to protect the genetic diversity of coffee. Known for its tall stature, wide branch spacing, and reddish young leaves, Ghimbi is a low-yielding plant that produces only small quantities of coffee — making each harvest a rare and valuable find.

In the cup, Ghimbi shines with floral and citrus tones supported by a citric tangerine aroma. Its medium, silky body and balanced acidity create a refined and harmonious profile that reflects both its Ethiopian heritage and Costa Rican terroir. The result is a coffee that is delicate yet complex, smooth yet expressive — a testament to Coffea Diversa’s commitment to cultivating rare varieties with extraordinary cup character.

Coffea Diversa’s Six Step Practice

Coffea diversa’s innovative and eco-friendly six-step coffee cultivation process begins by pulping cherries the same day they’re harvested, ensuring the highest quality. Their unique processing methods—Washed, Semi-Washed, and Natural—enhance the coffee’s flavour profiles, while manual selection and careful drying guarantee consistency in every batch.

For maximum freshness, the coffee is stored in a specially designed cellar made of pine logs to protect against humidity and is packed in 10kg plastic bags inside jute sacks.. This approach, combined with Gonzalo Hernandez’ commitment to sustainable practices, sets Coffea diversa apart, delivering a distinctive and exceptional coffee experience.

About Coffea diversa

There is nothing similar to Coffea diversa. Like in a flower garden, where you would find many types of plants producing many different kinds of flowers, in the Coffea diversa garden, you would find many rare coffees. A unique place with the most extensive private collection of coffee in the world.

Founded in 2003 by Mr. Gonzalo Hernandez, Coffea diversa has two main gardens, one in Costa Rica and another in Guatemala. The Costa Rica garden is located in a very remote area in the Biolley district, right next to the largest nature reserve in Central America, La Amistad.
