This Pink Bourbon has notes of tea, spices, and pink fruits, with a creamy body and a lingering sweet tea aftertaste. Medium tartaric acidity gives it clarity, while its well-balanced nature makes it both complex and comforting.

The farm’s volcanic soil and cool climate slow down cherry maturation, enhancing the complexity of this varietal. Cherries are hand picked at peak ripeness and naturally processed. The result? A cup with notes of tea, spices, florals, and pink fruits - all carried by a creamy body and sweet tea finish.
But what truly sets this coffee apart is Alma Silvestre’s intentional approach to detailed separation of varietals, careful ripeness selection, and slow sundrying, all of which bring clarity and character to the cup. From cherry selection to drying, their coffee is handled with respect for the varietal’s purity and the surrounding ecosystem. The cup is clean and well-balanced with medium tartaric acidity and aromatic depth–complex, but also smooth and very enjoyable.
The Florencia farm stands out for its commitment to eco-friendly practices. By using 100% solar drying and avoiding herbicides, the farm not only protects the local ecosystem but also ensures a sustainable production process. Their state-of-the-art water-saving equipment significantly reduces water usage, allowing the farm to save money that is reinvested into other green practices, making their production even more sustainable.

Alma Silvestre focuses on growing specialty coffee blending traditional methods with sustainable practices to produce high-quality coffee. Founded by Santiago Quiroga after the COVID pandemic, he left corporate life in Bogotá to manage and elevate his father’s farm La Florencia, in Quindío, Colombia. His mission is to maintain Colombian coffee's reputation as one of the best in the world, and he’s doing an amazing job at it.
