Developed from a very rare, almost extinct heirloom, these Cera Winey Green Coffee Beans are sourced from Coffea diversa in Guatemala, a coffee garden known for preserving rare coffee genetics and careful processing. Cultivated at 2,000 m.a.s.l. under shade of plantain, banana, and avocado trees, the coffee matures slowly and evenly. These conditions, combined with Jose Padilla's agronomic standards, result in dense beans with high consistency and quality.
Processed as an anaerobic natural fermentation, expressing winey characteristics, this lot reflects a method influenced by winemaking, designed to develop depth and aromatic complexity while staying balanced. In the cup, Cera Winey shows a structured and balanced profile with clean acidity and a pronounced body. Flavor notes include blueberry, licorice root, cane sugar, and dates, with a caramel-like sweetness and integrated fruit character. The winey fermentation adds complexity without dominating the cup, resulting in clarity and definition from start to finish.
Offered in 12.5 kg bags with Grain-Pro equivalent protection, this Cera Winey green coffee is packaged to preserve freshness and stability during storage and transport. Produced in limited quantities, it is a great option for roasters seeking a rare heirloom variety with consistent quality and a distinctive cup profile. Secure this lot while it remains available.
This Cera Winey is carefully selected for its performance at high altitude, Cera is known for producing dense seeds and delivering consistent, repeatable cup results across harvests. Its limited production and restricted availability place it among Coffea diversa’s most distinctive genetic offerings, sought after by roasters looking for rare varieties with dependable quality.
The Cera Winey process applies controlled fermentation to increase complexity while maintaining balance and structural clarity. This method enhances sweetness and fruit depth without introducing excessive ferment character, resulting in a cup with clear definition, integrated acidity, and a pronounced body. The final profile reflects both the genetic stability of the Cera variety and Coffea Diversa’s disciplined, precision-driven approach to processing.
Coffea diversa distinguishes itself apart by cultivating over eight hundred coffee species, varieties, and mutations across three gardens. Thirty of these are found on the Suchitan volcano in Guatemala, where the mineral-rich soil nourishes the plants. Unlike typical coffee estates, Coffea diversa grows rare and exotic varieties, offering unique flavours and profiles not found elsewhere.
Coffea diversa’s commitment to quality is obvious in its limited production. Gonzalo Hernandez and Jose Padilla grow only a few trees of each variety, resulting in exclusive, small-batch coffees sold in 10-kilogram bags. This careful cultivation ensures each batch is a unique and sought-after experience for roasters and connoisseurs worldwide.
Coffea diversa Suchitan is a collaborative effort by Jose Padilla and Gonzalo Hernandez. In the early 2000s, these two coffee friends took seeds from the original Coffea diversa garden in Costa Rica and established a new coffee garden in Suchitan, Guatemala, giving birth to Coffea diversa Suchitan.
Gonzalo explains, "We call ourselves a garden and not a farm. A coffee farm is normally monovarietal. In our case, we produce so many coffee botanical varieties. So what makes a garden beautiful is the diversity of plants." Discover how Padilla and Hernandez created this botanical haven for coffee enthusiasts worldwide.
