The Red Plum green coffee beans from Finca El Paraíso in Cauca, Colombia is a coffee that shows why this farm is at the center of innovation in the specialty world. Led by Alex, Daniel and Diego Bermudez, El Paraiso has gained worldwide recognition for its scientific approach to fermentation, creating coffees that are vibrant, consistent, and unlike anything else from Colombia.
This Castillo lot delivers a cup full of energy and balance. Expect bright flavors of plum, cherry, raspberry, and granadilla, lifted by a juicy acidity and rounded with a long cherry finish. Behind these notes is a precise process: double fermentation with pulp using a custom “Paraíso Red Fruit” culture made from mucilage and cascara, followed by thermal shock and careful dehumidified drying. The result is a clean, fruit-forward profile that stays true to its character from sample roast to production.
Packed in 24 kg boxes with Grain-Pro for freshness, Red Plum is a high-end Colombian coffee that gives roasters both distinction and reliability. With limited quantities available, it’s a chance to bring an extraordinary and modern expression of Castillo to your menu.
The Red Plum is a showcase of the Bermudez family’s innovative processing at Finca El Paraíso. The Bermudez family has developed a custom “Paraíso Red Fruit” culture from mucilage and cascara, guiding a controlled double fermentation that enhances the coffee’s complexity while ensuring repeatability. This method is designed not just to create bold flavors, but to deliver consistency across every lot.
After fermentation, the coffee undergoes a thermal shock wash and dehumidified drying—techniques that lock in aromatics, stabilize the cup, and maintain freshness. These innovations transform Castillo into a coffee that is reliable for roasters and extraordinary on the cupping table, proving why El Paraíso continues to redefine Colombian specialty coffee.
Finca El Paraiso stands out for its Consistency, Authenticity, and Knowledge. Their proprietary technology enables precise control of fermentation, ensuring exceptional and repeatable sensory profiles. Their innovative Thermal Shock technique preserves delicate flavors by using hot and cold water to stop fermentation at the perfect moment, setting new trends in the coffee industry.
Backed by deep knowledge of microbiology, they expertly manage microorganisms and employ advanced drying methods, such as dehumidifiers, to prevent overoxidation. This scientific precision, combined with creativity, consistently produces vibrant, high-quality coffee, making Finca El Paraiso a leader in the specialty coffee world.
Founded in 2008 by Diego Bermúdez and his brother Alexander, Finca El Paraíso is located in the Piendamó region of Cauca, Colombia. Though not from a coffee-growing family, Diego’s passion and hard work led him into coffee cultivation while studying Agricultural Business Administration, selling coffee to cooperatives to support his education.
In 2015, Finca El Paraiso won first place in a regional coffee competition, launching them into the specialty coffee world. Their success inspired them to keep innovating in coffee processing, and today they continue to deliver exceptional, sustainable coffee that has disrupted the world of specialty coffee.
