Meet Alma Silvestre by Santiago Quiroga, from Quindio, Colombia. Coffees from this farm ranked the 30 best coffees in 2024 Colombia, Land of Diversity competition; a clear marker of the quality and attention behind Santiago’s work at origin Alma Silvestre produces coffee with intention, focusing on clean processing, stable results, and practices that hold up season after season.
This Pink Bourbon lot undergoes a washed oxidated (OxiWashed) process, resulting in a clean and structured cup profile. In the cup, it shows notes of lemongrass, floral tones, and crisp acidity, supported by a light body and a defined orange peel aftertaste. The profile leans toward clarity and brightness, with a well-articulated acidity that carries through the cup and enhances its overall definition.
Available in 35kg bags packed in Grain-Pro bags. A single origin that stands comfortably on its own, refined, expressive, and easy to position on a menu. This coffee is perfect for roasters who want to offer true specialty coffee to their customers.
The defining element of this lot is the oxidated washed (OxiWashed) process, which introduces an additional level of control during post-harvest. By allowing a measured oxidation phase before washing, the process enhances clarity and acidity structure without introducing fermentation-driven heaviness. This results in a profile that is precise, clean, and well-defined, especially in high-elevation Pink Bourbon.
At Alma Silvestre, this approach is supported by careful lot separation and consistent post-harvest management. Working with a single varietal like Pink Bourbon allows for greater control over cup expression, while the structured processing ensures repeatability across batches. For roasters, this translates into a coffee with high clarity and stable performance, particularly suited for lighter roast profiles where acidity and definition are key.
The Florencia farm stands out for its commitment to eco-friendly practices. By using 100% solar drying and avoiding herbicides, the farm not only protects the local ecosystem but also ensures a sustainable production process. Their state-of-the-art water-saving equipment significantly reduces water usage, allowing the farm to save money that is reinvested into other green practices, making their production even more sustainable.
This balance of eco-conscious innovation and traditional hand-picking methods sets Alma Silvestre apart from other specialty coffees. Santiago Quiroga’s dedication to sustainability means that every cup combines the best of Quindio with the expertise of his team, resulting in a high-quality, ethically produced coffee that both roasters and consumers can enjoy.
Alma Silvestre focuses on growing specialty coffee blending traditional methods with sustainable practices to produce high-quality coffee.
