Moisture Content & Water Activity: The Two Numbers Every Roaster Should Track

A freshly picked coffee cherry is mostly water. Drying it down to an exportable, stable state is one of the most consequential steps in the entire supply chain, arguably more important to final cup quality than almost anything that happens afterward.

Moisture content is usually targeted around 11% at export, dry enough to store and ship safely, wet enough to avoid over-drying. Research from Dr. Flavio Borém at the University of Lavras (and others) consistently shows that slower drying at lower temperatures preserves shelf life and flavor better than fast, hot drying. Poor drying accelerates the breakdown of compounds tied directly to a coffee's sensory quality, and that damage compounds with excessive wet or dry storage over time.

Most moisture meters don't actually dry and reweigh a sample (that's the true lab method, and it's too slow and expensive for daily use). Instead, they measure capacitance and use the dielectric constant of water to estimate moisture in seconds.

Why this matters at the roaster

Moisture content directly affects roasted weight loss. A light roast might lose 12–15% of its green weight; a very dark roast can lose over 20%. That means weight loss alone is an incomplete way to judge roast degree, a 12%-moisture coffee and a 9%-moisture coffee roasted on the exact same profile will finish at noticeably different weights, purely because of the moisture difference. That's a real financial detail: lower-moisture coffee loses less weight in the roaster, which means more finished product per kilogram purchased. It also connects back to density, which we covered in Part 1, across specialty lots, higher density and lower moisture usually move together.

As a rough guide

Coffee above roughly 12.5% moisture is risky to ship or store for any length of time and tends to fade fast. Coffee that's too wet (15%+) often looks jade-green, dents easily under a fingernail, and tastes like green bell pepper or wet grass. Overly dry coffee looks pale or brownish and tastes woody and flat, lacking the sweetness and acidity that should develop during roasting. Most roasters find a comfortable working range somewhere between 9 and 12%, adjusting based on how soon the coffee will actually be roasted.

Water activity is a different, and arguably more useful, measurement. It's the rate at which "unbound" water in the coffee wants to evaporate, expressed as a fraction of pure water's evaporation rate. Two coffees can carry the same moisture percentage and still have very different water activity, depending on how they were dried.

Water activity is worth tracking for three reasons:

• Safety: below 0.60, there's essentially no risk of new microbial growth. The Specialty Coffee Association has set 0.70 as the line above which a coffee no longer qualifies as "specialty."
• Stability: cupping terms like "baggy," "faded," "aged," or "past crop" usually point to a coffee that's aged out. Around 0.60 is a reasonable soft ceiling for six months of shelf stability under normal storage.
• Sugar browning: Maillard-related browning reactions become more likely to happen as water activity climbs toward 0.70. Higher-water-activity coffees also tend to hold a more persistent acidity in the cup regardless of roast changes, while lower-water-activity coffees show acidity that's more sensitive to how they're roasted.

The practical takeaway

Unstable, high water activity can show up even in a coffee that measures at an "ideal" moisture percentage, usually because of uneven or overheated drying. History with a supplier, an understanding of their drying practices, and an actual water activity reading together give a much clearer picture than moisture percentage alone.

Visual Defects: What to Look for Before You Roast

A quick visual scan of a green coffee sample tells you a lot about how it was grown, processed, and handled, and a handful of odd-looking beans in an otherwise clean lot are almost always one of a small number of known, named defects.

Mills remove defects a few different ways: hand-sorting (common where labor is affordable, A skilled sorter can clean about one 60-kilogram bag a day), density tables that vibrate out low-density beans and foreign matter, and optical color sorters that use lasers and cameras to pull discolored beans, sometimes down to a specific shade of tolerance. High-capacity optical sorters can process hundreds of bags a day, though the best units can cost over $100,000.

Defects that happen before processing

• Insect damage: the coffee berry borer burrows directly into the seed, leaving visible holes.
• Black or discolored beans: caused by frost, insects, fungal disease, nutritional deficiencies, overripe cherry, or delayed depulping.
• Quaker: seeds that fail to brown properly during roasting. They stay pale orange or khaki even in a dark roast and give off a rancid, toasted-peanut smell when ground. Quakers are mostly caused by underripe cherry, and the only real fix is removing underripe cherry before processing starts, flotation and grading channels catch some, but nothing beats sorting at the picking stage. Specialty grade allows zero quakers in a 100-gram roasted sample.
• Peaberries, shells, and triangles: genetic development quirks. Peaberries occur naturally in roughly 5% of most coffee (occasionally much higher under stress conditions like drought or heavy fertilizer use). Shells and triangles come from abnormal seed development and tend to roast faster than normal beans due to their shape and lower density, sometimes adding carbon or smoky off-flavors. Properly calibrated density tables and screen sorters remove most of them.

Defects that happen during processing:

• Chipped, broken, or cut beans: mechanical damage from the pulper or huller. Minor nicks are common and low-risk; major chipping increases surface area and can occasionally lead to infection at the damaged spot.
• Silver-skin discoloration ("foxy"): a reddish tint from extended contact with the fruit during fermentation or cherry-drying. Mostly cosmetic, but it affects visual grade.
• Cherry pods and stuck parchment: coffee that wasn't properly hulled, leaving skin or parchment attached. This can harbor fungal infection and rarely roasts properly.
• Sours and stinkers: over-fermented beans with a brownish color and an acetic or briny smell, usually from delayed processing, dirty fermentation tanks, or uneven fermentation times.

Drying and storage defects tend to be the most serious, since drying is the most quality-critical step in the whole chain. Under-dried coffee is soft and darker green, with musty or vegetal flavors that turn cardboard-like fast. Uneven drying looks blotchy and invites mold or fungus, some of which, like the potato defect, stays hidden until roasting. In storage, hot and humid conditions accelerate aging, insects and moths can infest dried coffee, and reabsorbed moisture causes fading in both appearance and flavor. Stable, cool, dry storage prevents nearly all of it.

The Bottom Line

Screen size, density, moisture, and defect count aren't separate checkboxes, they interact. A coffee's density shifts with its moisture. Its screen size affects how evenly it roasts. Its defect count and its drying history often tell the same story from two different angles. None of these numbers replace tasting your own roasts, but together they explain a lot about why two coffees with similar cupping scores can behave completely differently once they hit the roaster.
